Our Story
Born from
the night watch.
Nightwatch was a shift I stood too many times to count — first as a deckhand, then as Captain of sportfishing boats out of San Diego, California. Whether I was manning the helm through the night or grabbing just a few hours of sleep before being shaken awake for my 1 a.m. watch, one thing kept us going: coffee.
We drank it dark, strong, and pungent. Taste came second to the one thing that mattered most at sea — staying alert.
Twenty years later, in 1994, I opened Nautical Bean™ Coffee Company in Oceanside, California. I quickly realized that most of my customers drank coffee for the same reason we did on the boats: to wake up or stay awake. So I set out to create a bold, full-bodied blend roasted for maximum caffeine performance and rich flavor.
After a year of blending, roasting, and countless taste tests, NightWatch™ Coffee was born in 1995 in the cupping room of Daymar Corporation with my good friend and master roaster, Roy Gallegos.
When Roy asked what we should call this special blend, I instantly thought back to my deckhand days. Captains would point to the four-pot coffee brewer and say, “Three pots for the passengers… the top right one, brewing all day, is reserved for the Night Watch crew.”
